The Base
Lemon Filling
The Base
  1. Pulse all the ingredients in a high speed blender or food processor until mixture sticks together. Try not to over blend, there should still be some texture from the almonds.
  2. Press mixture evenly into mini tart tins approximately 9cm.
  3. Chill in the fridge while you make the filling.
The Filling
  1. Gently heat all the ingredients, except the agar agar in a small pot on low heat.
  2. Once heated through gently whisk in the agar agar.
  3. Once mixed, bring mixture to the boil, reduce heat & simmer for a few minutes.
  4. After simmering for a few minutes, allow the mixture to cool a slightly. Let cool for approximately 3-5 minutes.
  5. Once slightly cooled, pour into bases and chill in the fridge for a few hours or overnight.
  6. Before serving, decorate with fruit or edible flowers if desired. Remember, this dessert should be served cold.
